Pongal


Ingredients

1/2 cup rice
1/2 cup moong dal
2 tbs chana dal ( for tadka)
2 tbs cashews
1 tsp chopped ginger
1 tsp fennal seeds
1 tsp cumin seeds & musturd seeds
1/2 tsp hing
3 green chillis ( slit length wise)
1 tbs pepper corns
1 spring curry leaves
2 tbs oil
2 tbs ghee (clarified butter)
salt



Method
.
Wash rice and moong dal 2 to 3 times and soak for 30 min
.
Heat oil in a preassure cooker add chana dal ,cumin seeds,musturd seeds ,
fennal seeds , cashews ,pepper corns , chopped ginger, green chillis ,and
curry leaves fry everything for a min or two ,until chana dal becomes golden
.
Now add hing ,soaked and drained rice and moong dal to preassure cooker
fry for 5 min
.
Add salt and 3 cups of water ,Preassure cook for 2 wistles ,turn off the stove and wait for 10 min ,open lid and add ghee ,mix everything
.
Done , Serve hot with any chutney ,pickle and papad

PB&J Pancakes



Ingredients

1 cup pancake mix
2 to 3 tbs peanut butter
Butter to make pan cakes
Jelly
1/2 cup hot water



Method
.
Take 2 to 3 tbs of peanut butter in to bowl add hot water and wisk until
smooth and thin
.
Now add thinned peanut butter mixture to pancake mix and add extra water
to make a batter
.
Heat 1 tsp of butter in a pan add a laddle full of batter and cook on both
sides
.
Take the required quantity of jelly in to bowl and microwave for 30 to 40 sec
to get a liquid like consistency
.
Pour jelly over pancakes and serve hot
.
Done.

Meaty Spaghetti


Ingredients

1 pound ground meat ( I used chicken )
1 onion chopped
1 dry red chilli
3 garlic cloves chopped
1 tsp oregano
3 tbs tomato paste
1/2 cup tomato sauce
1 tsp hot sauce
2 to 3 tbs oil
salt
1 pound spaghetti cooked as per package directions
2 tbs parmesan cheese



Method
.
Heat oil in a pan add redchilli and garlic fry for a min then add ground meat cook on medium
flame until brown
.
Now add chopped onions and oregano sautee for 3 more min until onions are soft
.
Add tomato paste ,tomato sauce ,hot sauce and salt MIX everything and cook for another 1o
min
.
Add cooked spaghetti MIX and sprinkle with cheese
.
Done serve hot

Vadappa ( thin and crispy rice flour roti )


Ingredients

2 cup rice flour
1 onion (chopped veryyyy finely)
1/4 cup cilantro (choppedfinely)
2 green chillis ( chopped finely)
salt
water to kned the dough
oil for applying to pans
2 to 3 cooking non stick pans


Method
.
Add onions, green chillis ,cilantro and salt to rice flour sprinkle water and make
a stiff dough
.
Now take a pan and apply 1 tbs of oil with hand and take a handfull of dough
make a round ball and press directly in to pan until u get a thin layer
.
( press the remaining dough on 2 to 3 pans , if u are using same pan once u finish cooking one roti just wash the pan with plain cold water in sink and wipe with paper towel and ready to use again to press another roti)
.
Now keep pan on a medium flame for 3min until u see golden color on
bottom side ,if u want u can add another tsp oil , flip and cook on other side
.
If u want a crispy roti then cook on a low flame ,If to want soft roti then cook on medium high
.
This roti tastes great with any south indian dal ,U can try this with my older post Ginger Dal

Ginger Dal


Ingredients

1 cup toor dal
3 tbs chopped ginger
1/4 cup cilantro
2 small tomatoes ( or) 1 large
4 to 5 green chillis
2 tbs oil
1 tsp cumin seeds and musturd seeds
1/2 tsp fennal seeds
1 dry red chilli
1/2 tsp turmuric



Method

.Preassure cook toor dal and green chillis for 2 to 3 wistles ,Mash dal and greechillis ,Keep
aside

. Heat oil in a large pan add cumin seeds ,musturd seeds,fennal seeds ,dry red chilli ,cilantro
and chopped ginger fry for a min then add turmuric and above mashed dal

. Now squeeze tomatoes with hand directly in to pan
( note : do not add chopped tomatoes , dal tastes much better with squeezed tomatoes )

. Add 3 to 4 cups water ( thick soup like consistency )

. Adjust salt and Simmer for 15 min

. Done ,serve hot with rotis

Tindora fry (Dondakaya vepudu)


Ingredients

1 pound tindora (slit length wise)
4 tbs fresh grated coconut
2 green chillis (chopped)
1 onion (sliced)
Salt

For tadka

3 tbs oil
1 tsp cumin seeds and musturd seeds
1 tsp fennal seeds
2 tbs chana dal
1/2 tsp hing
2 dry red chiilis
2 garlic cloves (chopped)


Method

Heat oil in a wide pan ,add all the tadka ingredients fry for min then add sliced onions chopped green chilli and tindora slices ,mix everything ,cover and cook on a low flame untill tindora becomes soft then add grated coconut and adjust salt.DONE

Peanut Butter Brownies



Ingredients

2 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 stick unsalted butter, at room temperature
1 cup brown sugar
1/2 cup peanut butter
1 egg
1 tsp vanilla extract
1/4 cut roasted peanuts
1 cup of clocolate frostring ( I used store bought )


Preheat oven to 350°F
.
Shift together the flour, baking powder ,baking soda and salt in to a bowl
.
Beat together the butter, brown sugar and peanut butter on medium speed until creamy .
Add the egg and vanilla to the above creamy mixture and beat well.
.
Turn off the mixer and add the shifted flour and baking powder mixture. Beat on low speed
until well blended then add roasted peanuts and mix well
.
Grease baking pan and line with parchment paper ,pour batter into the pan and spread it
evenly
.
Place the baking pan in the oven and bake until the top is golden for , 25 to 30 minutes.
.
Remove pan from oven and Let it cool completely.
.
Cut in to desired shapes and apply frosting
.
Done
