Idli with Hotel Sambhar


Ingredients for Sambhar Powder

1/4 cup fresh grated coconut
1 tbs cumin seeds
1 tbs coriander seeds
1 tsp fennal seeds (saunf)
1 tbs urad dal
1/2 tsp methi seeds
3 inch piece of tamarind
1 tbs jaggary
1 spring curry leaves
5 dry red chillis
1 inch cinnamon
1 tsp oil
.
Method
.
Add 1 tsp oil to a pan and roast all the above ingredients ( except jaggary) on a low flame untillll golden color (approx 7 to 10 min )
.
Let it cool ,add jaggary and grind to a fine powder

( if u wish then u can add 1 tsp of store bought mtr sambhar powder to get the nice color ,I added)

Done .

( if u want to store this for long period ,double the quantity of everything and add dry coconut insted of fresh coconut ,and add 1/4 cup coconut milk while making sambar)




Ingredients for sambhar


1/4 cup toor dal
1/4 cup chana dal
1/2 tsp turmuric powder
1 cup chopped veggis ( carrots, beans, eggplant)
1 tomato ( chopped)
1/2 onion ( chopped)

For Tadka

2 tbs oil
1 tsp cumin and musturd seeds
pinch of hing
1 dry red chilli



.
Method
.

Preassure cook toor dal and chana dal with a pinch of turmuric, mash them and keep aside
.
Heat 2 tbs of oil in a large sauce pan , add cumin seeds , musturd seeds, dry red chili and hing ,when musturd seeds splutter add chopped onions ,tomatoes and chopped veggis ,sautee everything until oil separates .
.
Now add above made sambhar powder and salt ,mix everything and add 4 cups (approx)
of water, bring to a boil and cook until all the veggis are cooked
.
Now add mashed dal until u get the consistency u desired
.
Simmer for 5 min ,garnish with cilantro
.
Done serve hot with idlis


Ingredients to make idlis ( simple recipe)
1 cup urad dal
2 cups idli rava
salt and pinch of baking soda before using
.
Method
.
Soak urad dal 5 to 6 hours, and grind to a smooth paste in a blender ( u can add 2 cups of water while grinding )
.
Add the above ground urad dal paste to idli rava ,mix everything add water until u get the thick batter
.
( after 30 min check with batter it will become very thick by soaking all the water ,so add some more water and mix )
.
Let it ferment for 8 to 10 hours ( batter will become double in size)
.
Befor making idlis, take 1/4 cup water add salt and baking soda and mix to the idli batter
.
Pour 1 laddle of batter in to each idli mould and steam for 15 to 20 min
.
Done
