INGREDIENTS
2 cups okra ( washed , pat dry, and cut in to 1 inch pieces)
1 cup onion ( chopped in to big pieces)
1 cup tomato ( chopped in to big pieces)
2 to 3 tbs cashews
2 green chillis ( slit length wise)
1 tbs garlic ( chopped)
1 tbs ginger ( chopped)
1 tsp chilli powder
1 tsp coriander powder
1 tsp amchoor powder
1 tsp garam masala powder
1 tsp cumin seeds
3 tbs oil ( for curry)
Oil for deep frying okra pieces ,
If u dont want to compramise with taste of dish ,then it is very important to deep fry okra pieces ,if not u can add 2 tbs of oil to a wide pan and shallow fry okra pieces
METHOD
.
Deep fry okra pieces in oil until done and keep aside
.
In a wide pan add 3 tbs of oil then add cumin seeds , chopped garlic , ginger and slit green chillis
.
Add chopped onions and cashews , fry on high flame for 3 to 4 min until onions are light brown, then add chopped tomatoes , fry for 2 more min until tomatoes are soft
.
Now add fried okra pieces , coriander powder , chilli powder , garam masala powder , amchoor powder and salt , Mix everything and fry on medium flame for 3 to 4 min
.
Sprinkle with cilanto
.
Done serve hot with roti or naan
beautifully decorated with cashews.. looks delicious.. i am a bindi fan. i make it atleast twice a week.. even now i had bindi subji and sambar. :) sometimes i make tomato-cashew gravy with fried bindis floating in it...it tastes good too.
