Ingredients
2 cups cooked brown rice ( cook in 1 : 2 ratio, rice and water)
1/2 cup mixed bell peppers
1/2 cup pinapple chunks
For Vinaigrette:
1/4 cup oil
1 garlic clove ( chopped)
1 tsp sugar
1/2 lemon juice
salt
pepper
Mix all the above ingredients and keep aside

Method:
Take cooked rice in a bowl add peppers , pineapple chunks and vinaigrette . Mix well
Serve warm on a bed of spinach

this is one of my favourite ways to eat rice. i actually prefer rice in salads to plain rice or pulaos.
