Fruit pie


INGREDIENTS

1-1/2 cup all-purpose flour
2 tbs brown sugar
1/2 tsp salt
1/2 tsp baking powder
4 tablespoons unsalted butter (cut in to cubes)
5 tablespoons shortening (cut in to cubes)
1/4 cup ice cold water



Keep butter & shortening into freezer for about 20 minutes.

Take all-purpose flour, brown sugar, salt and baking powder into the bowl ans mix well.

Mix butter and shortening cubes to above flour mixture with fork ( do not over mix)

Sprinkle with ice water untill all the flour comes together ( dough must not be wet)

Place this dough into plastic wrap , chill in refrigerator for a 20 to 30 minutes.

Remove from refrigerator and press the dough in to pie pan

place foil above the dough and add cup of dry beans ( blind baking)

bake at preheated 350 oven for 25 to 30 min and cool



For fruit topping
1 cup apples
1 cup pineapples
2 tbs butter
1 tsp cornstarch or all purpose flour
1/2 cup brown sugar
Method
Heat pan add butter when butter melts add fruits cook for 5 min then add brown sugar and cook on a low flame untill apples become soft , sprinkle with flour or cornstarch to make it thick, mix well and pour on cooled crust .
refrigerate for 1 hour
DONE

i've never used shortening before. Dunno if it really makes a diff in the crust. This looks yummy !
