Paper Dosa






Ingredients for dosa batter

5 cups raw rice
1 cup urad dal
1 cup poha (atukulu)
1 tsp methi seeds (fenugreek seeds)

After fermenting

salt
1/2 tsp baking soda

Method

Wash rice , urad dal and poha add methi seeds mix everything and SOAK overnight with enough water (atleast 8 hours)

Next morning drain water from above soaked mixture and grind in to a course batter by adding just enough water ( it must be like a pancake batter consistancy)

Now keep the batter for fermenting atleast 7 hours or overnight

( If weather is cold keep the batter in oven and turn on oven light or preheat oven for 5 min ,turn off and keep batter )


Befor making dosa add salt and 1/2 tsp baking soda ,mix well

Batter is ready for dosa

Potato filling



Ingredients for Potato filling


2 potatoes ( boiled)

1 big onion (sliced)

4 green chillis (slit)

1 tbs ginger (chopped)

1 tsp cumin and musturd seeds

1/4 cup cilantro

salt

3 tbs oil

1/2 tsp turmuric

1 tbs chana dal


Method


Heat oil in a pan add cumin seeds,musturd seeds,chanadal fry for 1 min then add ginger ,onions,greenchillis ,turmuric and salt sautee until onions become soft then add boiled potato cubes ,cilantro and 1/4 cup water mix eveything and cook for 3 min ( If u want u can add frozen peas)


Done





Ingredients for Onion spread


1 cup onions( chopped)

1 tsp chilli powder

1 tsp tamaring paste

salt


Grind everything to a chunkey paste and keep aside




pappula podi ( roasted chanadal powder )


1/2 cup pappulu ( roasted chanadal or chutney dal)

1 tsp cumin seeds ( toasted)

1 small piece tamarind

5 dry red chillis( toasted)

salt


grind everything to a fine powder







For making dosa


Heat dosa griddle to medium heat and spread batter with laddle like as shown in below picture then add 1 tsp oil and spread onion paste and sprinkle dal powder

and add 1 scoop of potato filling in the middle and fold ``





For cone dosa cut one half of dosa in middle as shown in below picture and turn it round

5:1 ratio of rice and urad dal-must be awesome. I use 4:1 normally. Will try this. Nice pix. The dosa looks delish!
