6 small indian Egg Plant
3 tbs black sesame seeds
4 garlic cloves
1 inch ginger root
1/2 cup cilantro
2 tbs coconut powder
1 tsp chilli powder
1/2 tsp turmuric
1 tsp coriander powder
1 tbs tamarind paste
1 tsp sugar or jaggary
5 to 6 tbs oil
1 onion ( chopped in to big chunks)
1 tsp cumin & musturd seeds
2 cloves
Heat pan on medium and toast black sesame seeds for 3 to 4 min
In a food processer add toasted sesame seeds and salt grind to a smooth powder
then add garlic,ginger,coconut powder,chilli powder,coriander powder,turmuric,cilantro ,sugar and tamarind grind everything untill smooth (do not add water)
Now add 2 tbs oil to a ground masala and mix
Make a slit in the middle of eggplants and stuff them with masala ( like as shown in above pic)
Heat oil in a pressure cooker add cloves ,cumin seeds,musturd seeds,chopped onions fry for a min then add stuffed eggplant mix and cook for 2 min then add 2 cups water cover with lid and preasure cook for 2 whistles then trun off stove and rest it for 10 min ( if eggplants are not soft u can cook them for 1 more whistle)
Done open the lid and serve hot with ghee and roti
