Ingredients for Gutthi vankaya
6 small eggplants
1/2 cup peanuts
3 tbs white sesame seeds
2 tbs coconut(dry)
3 garlic cloves (chopped)
1/2 onion (chopped)
2 inch tamarind
1 tbs sugar or jaggary
1 tbs chilli powder
1 tsp coriander powder
salt
2 to 3 stalks of cilantro
4 to 5 tbs oil
1/2 tsp turmuric
2 cups water
1 tsp cumin seeds and musturd seeds
2 cloves
2 red chillis dry
Method
Heat 1 tbs of oil in a pan add peanuts and roast them for 5 min then add sesame seeds fry for 2 more min then add coconut and tamarind fry everything until coconut is brown
In a blender add the above roasted peanut,sesame seeds,coconut ,tamarind along with coriander powder,chilli powder,salt,sugar Grind everything to a fine powder
Cut the eggplants in the middle and stuff with above ground powder and keep aside
Heat oil in a preassure cooker add cloves,cumin seeds,musturd seeds,red chillis fry for a min then add chopped garlic and onions fry for 2 min then add turmuric powder and above stuffed eggplants and cilantro
Mix everything cover with lid and cook on a low flame for 5 min then add 2 cups water and preassure cook for 2 to 3 wistles
DONE
4 cups of cooked white rice
1 cup fresh grated coconut
4 slit green chillis
1 stalk curry leaves
1 tbs chana dal
1 tbs urad dal
1 tsp cumin seeds and musturd seeds
1 tsp sugar
4 tbs oil
2 dry red chillis
pinch of hing
salt
Method
.
Heat oil in a wide pan add cumin seeds, musturd seeds , chana dal , curry leaves ,dry red chillis , urad dal ,green chillis ,hing sautee for 2 min then add coconut , salt and sugar fry for 2min
.
Add the above mixture to rice MIX everything
.
