Set Dosa with Vegetable curry


Ingredients:
2 Cups rice

1 Cup poha
1 Cup yogurt
1 tsp Fenugreek seeds
Salt
pinch Baking soda
Oil




Method

Wash and soak rice and fenugreek seeds in warm water for about 2 hours.

Wet poha with little water and then grind the rice and methi seeds along with poha and salt into a very soft thick batter.

keep aside for fermentation for 8 to 12 hours.

Add yogurt and baking soda to the fermented batter before making dosas

Pour the batter into the griddle.

The thickness of the batter should be such as when poured on the heated griddle it should automatically set itself into a fine thick circle.

Cook both sides over medium heat, with 1/2 tsp oil.

DONE serve hot with veggi curry

Ingredients for vegetable curry

2 cups mixed vegetables ( potatoes, carrots, beans ,peas ,tomatoes,califlower)
1 tsp ginger garlic paste
1/2 onion (chopped)
1/2 tsp turmuric
1 tsp coriander powder
1 tsp chilli powder
1 tsp cumin seeds and musturd seeds
2 to 3 tbs oil
salt

Grind to a smooth paste

3 tbs fresh grated coconut
1 tbs kaskas (gasagasalu) ( dry roast before grinding)
2 cloves
1 inch cinnamon
1 cardamom

Method

Heat oil in a preasure cooker add cumin seeds and musturd seeds when start to splutter add chopped onions fry for a min , add ginger garlic paste and turmuric sautee for 2 min
.
Now add chopped vegetables and mix well
.
Add chilli powder, coriander powder ,salt , above ground coconut paste and 3 cups water MIX
everything and preassure cook for 2 to 3 wistles
.
DONE SERVE HOT WITH DOSAS
