Set Dosa with Vegetable curry
Ingredients:
2 Cups rice
1 Cup poha
1 Cup yogurt
1 tsp Fenugreek seeds
Salt
pinch Baking soda
Oil
Wash and soak rice and fenugreek seeds in warm water for about 2 hours.
•
Wet poha with little water and then grind the rice and methi seeds along with poha and salt into a very soft thick batter.
•
keep aside for fermentation for 8 to 12 hours.
•
Add yogurt and baking soda to the fermented batter before making dosas
Pour the batter into the griddle.
•
The thickness of the batter should be such as when poured on the heated griddle it should automatically set itself into a fine thick circle.
•
Cook both sides over medium heat, with 1/2 tsp oil.
•
DONE serve hot with veggi curry
Ingredients for vegetable curry
2 cups mixed vegetables ( potatoes, carrots, beans ,peas ,tomatoes,califlower)
1 tsp ginger garlic paste
1/2 onion (chopped)
1/2 tsp turmuric
1 tsp coriander powder
1 tsp chilli powder
1 tsp cumin seeds and musturd seeds
2 to 3 tbs oil
salt
Grind to a smooth paste
3 tbs fresh grated coconut
1 tbs kaskas (gasagasalu) ( dry roast before grinding)
2 cloves
1 inch cinnamon
1 cardamom
Method
Heat oil in a preasure cooker add cumin seeds and musturd seeds when start to splutter add chopped onions fry for a min , add ginger garlic paste and turmuric sautee for 2 min
.
Now add chopped vegetables and mix well
.
Add chilli powder, coriander powder ,salt , above ground coconut paste and 3 cups water MIX
everything and preassure cook for 2 to 3 wistles
.
DONE SERVE HOT WITH DOSAS

Spaghetti with Meatballs
1 pound spaghetti
water
salt
Ingredients for meat balls
1 pound ground chicken ( u can use any meat)
1 tsp garlic powder
1/4 cup grated Parmesan or pepper jack cheese
salt and pepper
1/2 cup bread crumbs
2 tbs oil
Ingredinets for sauce
2 tbs oil
2 cups crushed tomatoes(canned)
4 cloves of garlic(chopped finely)
1/2 onion (chopped finely)
1 tsp red chilli flakes
2 tbs tomato ketchup
1 cup chicken stock or water
1/4 cup grated jack cheese or parmesan cheese

Egg bajjilu (egg fritters)
Ingredinets
6 eggs
1 cup besan (gram flour)
2 tbs rice flour
pinch of baking soda
salt
water to make batter
oil for deep fry
1/2 lemon
Ingredients for Pappula podi (dalia power )
In a blender combine
1/2 cup dalia
1 tsp chilli powder
1/2 tsp cumin seeds
1/2 inch tamarind
salt
Grind all the above ingredients to a fine powder and keep aside

Salsa Verde
Ingredients
4 tomatillos
2 green chillis
1/4 cup cilantro
1/2 cup onions (chopped)
1 small garlic clove
2 tbs oil
salt
Method
Remove husk and wash tomatillos , place on a baking tray
Roast them in a broiler for 10 to 15 min or until the outer layer is dark
In a blender add roasted tomatillos,onions,chillis,cilantro,salt ,garlic and oil Pluse 4 to 5 times for chunky salsa (if u want smooth salsa u can blend more)
Done, serve with tortilla chips

Gutthi Vankaya with Coconut rice
Ingredients for Gutthi vankaya
6 small eggplants
1/2 cup peanuts
3 tbs white sesame seeds
2 tbs coconut(dry)
3 garlic cloves (chopped)
1/2 onion (chopped)
2 inch tamarind
1 tbs sugar or jaggary
1 tbs chilli powder
1 tsp coriander powder
salt
2 to 3 stalks of cilantro
4 to 5 tbs oil
1/2 tsp turmuric
2 cups water
1 tsp cumin seeds and musturd seeds
2 cloves
2 red chillis dry
Method
Heat 1 tbs of oil in a pan add peanuts and roast them for 5 min then add sesame seeds fry for 2 more min then add coconut and tamarind fry everything until coconut is brown
In a blender add the above roasted peanut,sesame seeds,coconut ,tamarind along with coriander powder,chilli powder,salt,sugar Grind everything to a fine powder
Cut the eggplants in the middle and stuff with above ground powder and keep aside
Heat oil in a preassure cooker add cloves,cumin seeds,musturd seeds,red chillis fry for a min then add chopped garlic and onions fry for 2 min then add turmuric powder and above stuffed eggplants and cilantro
Mix everything cover with lid and cook on a low flame for 5 min then add 2 cups water and preassure cook for 2 to 3 wistles
DONE

Tandoori Chicken
Ingredients
6 chicken leg pieces
1 tbs ginger garlic paste
1 whole lemon juice
1 tsp chilli powder
1 tsp garam masala
1 tsp coriander powder
1 tsp kasoori methi
1/4 cup yogurt
1 tbs oil
2 tbs melted butter
salt

Breakfast Biscuits
Ingredients
2 cups self-rising flour
( if u want to use all purpose flour SHIFT together 2 cups all purposr flour +1 tbs baking powder + 1/4 tsp baking soda + 1/2 tsp salt )
¼ cup shortening
1 cup milk or buttermilk
Preheat the oven to 400 degrees.

Put the flour in a bowl. With a pastry cutter or your fingers rub the shortening into the flour until the texture is like cornmeal.
.
Form a hole or well in the middle of the flour mixture and pour the milk or buttermilk into the well.
Use your fork to stir the flour into the milk, stirring in a circle so that a little more flour is incorporated with each pass.
Roll out dough to ½ inch and cut with a 2 inch cutter
optional : I applied egg white mixed with 1 tbs water on top of each biscuit to get the color
Place biscuits onto a greased baking sheet and bake at 400 degrees for 10-12 minutes.

Ingredients
2 eggs
1 cup sugar
1/2 cup butter
1/2 cup milk
2 tsp vanilla extract
1 1/2 cups all-purpose flour
1 3/4 tsp baking powder
I used store bought frosting
In a bowl, cream sugar and butter,add eggs and vanilla extract beat for 5 min until smooth
